Simple Homemade Mayonnaise

  • Immersion blender


  • 1 cup olive oil I like olive oil for this, but you can use any neutral oil that is liquid at room temperature.
  • 1 egg
  • 1 tablespoon white or rice vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon kosher or sea salt
  • 1/2 teaspoon dried mustard


  • In a tall, clear jar or glass, add all your ingredients. Let it rest for 1 minute.
  • Insert your immersion blender to the blades are at the bottom of the container.
  • Blend for about 30 seconds until you start seeing the mayo form on the bottom.
  • Gently tilt your glass side to side while continuously blending so the oil moves down to the blades. Move slowly and deliberately, watching to make sure the mayo is forming and the oil is getting down there. Do not lift up your blender. Leave it fully inside the jar during this process.
  • Once the mayo is completely formed at the bottom, slowly lift your blender to the top portion of the ingredients in the jar to incorporate them into the emulsion.
  • When the mayo is completely formed and all the oil is incorporated, turn off your blender and scrape the mayo off it into the container.
